If the Bluetooth icon will be shown or not depends on the accessory/device that is connected to the phone, some will display the icon, some will not.
The NFC icon will never be shown and since the icons in the status bar can't be adjusted in Android Pie, you can not add it either, at least not with the default launcher.

In Android 9.0, the Bluetooth icon will only be shown when you are connected to an accessory, as long as the accessory supports this, or else it won't be shown at all.

but there is no "bluetooth" icon after pairing with the SECOND PHONE but it is actually after pairing with headphones or speaker. When will the NFC icon be there?

what about displaying the icon when two phones are paired
@Wlodek1, there is no specific icon displayed, it's still using NFC and Android Beam (to transfer the data between the devices).
